Prepare in advance for your fight, and I mean more than 2 weeks!

Carbs are needed pre training, use the healthier option wholemeal pasta/rice with vegetables. It isnt rocket science, the body is like a fire and carbs are the fuel, you have to feed it for it to burn...

Protein post fight to feed the muscle and aid faster recovery.

Look at eating super foods, quorn, strawberries, chillis etc.

Reduce portion size gradually, dont suddenly go from eating a diet of shite to child size meals, this will "shock" your body and you will retain fat/fluid.

Do your homework and learn what suits your needs. Water loading is not a sensible option and may make you feel drained, lethargic and unable to perform as you'd like to.
